Broad Beans (Fave) with Pecorino Cheese Recipe
Let’s start with an healthy starter this Sunday. This is an easy recipe that you can prepare anytime. The preparation takes only 15 minutes of your time.
Last week, I bought again some organic seasonal vegetables and fruits online. The quality is very good, although too expensive. In the basket that I bought, this time, there was also broad bean, called fave in Italian, which I really love plus carrots and celery. So I realised that I had an alternative way to eat these vegetables at home and today I am sharing with you my recipe.
Fave (pl.) of fava is (botany) herbaceous plant belonging to the legume family papiglionacee, with erect, pinnate leaves, white flowers with black spots, and the fruit a legume with flat seeds inside and large, its scientific classification is Vicia faba.
There are different way to eat broad beans (fave):
- Cooking fave with pasta
- Making salads
- Eating its beans
- Serving with pecorino cheese and some bread.
In Italy, you can buy (fave) broad beans at supermarket in May when the weather is getting nicer and warmer. I was used to organize picnic outdoor eating beans and cheese with friends to celebrate Labor Day.
So, on Wednesday, I went to town and bought some italian pecorino cheese. Yesterday, I served broad bean with pecorino, carrots and celery as starter.
Tip: If you don’t know this vegetable. Peel the (fave) broad beans. In fact, you have to eat only its fruits. First, remove the beans from the pods (much like you would when shelling peas) by running a finger up the seam of the pod, splitting it open and removing the beans. There are about 4 to 5 beans per pod.
Ingredients for 2 or 3 people:
- 150-200 gr fave-broad beans
- 150-200 gr pecorino cheese
- carrots
- celery
- extra virgin olive oil
- salt to taste
- balsamic vinegar
Preparation:
- Wash and cut the carrots and celery.
- Peel (fave) broad beans and cut pecorino cheese
Preparation of vinaigrette:
- In a small cup, add salt oil and balsamic vinegar.
- Mix the ingredient and serve with the vegetables.
How to eat it: You can dip the celery or carrots in the vinaigrette of olive oil and balsamic vinegar. Try also to eat the cheese with celery, I discovered yesterday that it tastes good. You might like it too.
Serve the starter with your favourite red wine.
